Salad
- 1 large head romaine lettuce, rinsed and chopped
- 4 cups baby spinach
- 2 mangos, chopped
- 1 pint cherry tomatoes, halved
- 1/2 English cucumber, sliced and halved
- 1 red or orange bell pepper, chopped
- 4 clementines, peeled and segmented
- 1 avocado, sliced or chopped
- 1/3 cup diced red onion
- 1 cup raw cashews, toasted in a skillet
- 2 tablespoons chopped cilantro
Honey Lime Vinaigrette
- 1/3 cup extra virgin olive oil
- 3 tablespoons lime juice
- 1 tablespoon apple cider vinegar
- 1 1/2 teaspoons lime zest (zest of one lime)
- 2-3 tablespoons honey, to taste (3 for sweeter)
- 1 teaspoon Dijon mustard
- 1/2 tsp each garlic powder, salt
- 1/4 teaspoon pepper
Directions
- Prepare Chili Lime Chicken per its recipe; let rest. Prep vegetables and dressing while it rests.
- Dressing: Whisk olive oil, lime juice, cider vinegar, lime zest, honey, Dijon, garlic powder, salt, and pepper. Chill. Adjust honey to balance fruit sweetness and preferred tang.
- Assemble: Add romaine and spinach to a large bowl. Layer mango, tomatoes, cucumber, bell pepper, clementines, avocado, red onion, cashews, and cilantro. Top with sliced/chopped chicken.
- Drizzle with dressing and toss, or dress individual portions if expecting leftovers. Serve immediately.
